Good Luck Watson, kick some butt. Didn,t you do really well in a national off road race last year ?  For a long race make sure ya eat alot of pasta, baby food banana flavor is great for energy, banana and strawberry is great too. Your local vitamin store will have electrolyte in a liquid, that,s good if it,s a hot race. A 2 hour race is a brutal, that,s cool that you have a free ride for the race, giver hell. ;D

When you go to any offroad race here in the eastern midwest you will see that 80% of the bikes entered are KTM 2 strokes so you will be well equipped. Pickle juice (DILL) is the magic elixir for fighting muscle fatiuge and cramps, thought it was crap too till I tried it, seems that many endurance athletes use it and has some university studys to back it up.

yes pickle juice is absolutely disgusting, but it works, when i played college tennis, the whole team took a shot of it before we'd play, it helps with cramps extremely well, not so sure about muscle fatigue, because if you're already tired/sore you will still be that way after you drink it, but the best way to avoid getting cramps is #1 drink water, even when you're not thirsty/think you need water, drink. In a 2 hour tennis match i'd drink 2-3 gallons of water and i'd usually have one of those gallons cut half and half with gatorade

I'm not worried about getting cramped up, thats what training and nutrition is for :-) but yes pickle juice does help, and banana baby food!

Carb loading, I like it. My favourite part of training :P

Breakfast: Bacon, eggs, toast, hash browns, tomatoes and sasauges.
Lunch: Roast potatoes with rice, veggies and a fat steak. coffee is a must too (sarcasm)
Dinner:Something with alot of pasta in it. And a Pie for desert. A big one.

before I really did me knee, thats how I rolled. Or something along those lines. Good times... I was never short of energy. From a biological perspective, the pickle juice makes sense.
The native new zealanders used to drink alot of pineapple juice after a massive meal of protien to prevent cramps. The reason for this was, well the obviously didn't know this they just did it cos it worked, but the highly accidic pineapple juice allowed their stomachs to process all the protein and carbs faster. I'd wager its something similar with pickle juice. Although as I'm writing this it occurs to me that you guys were referring to muscle cramps... That ones got me beat. But I'll post this anyway :D

Just a fun fact for everyone :P
