You can turn the idle screw up so they will idle but properly set without your hand on the throttle,they will idle for a few seconds and then stall.

OK Ford, I used to think you were OK.... not anymore... just keep your idle down low so it will stall when the power of the smoker scares you.... so by all means idle down
